Production:
The flavour compounds and a part of the oil are extracted from finely chopped and freshly roasted hazelnuts by supercritical CO2 extraction. Then the flavour compounds are dissolved in ethanol by repeated shaking-out. The product contains no other solvent residues, no inorganic salts, no heavy metals and no reproducible microorganisms [1].

Extract:
Yellow-clear, alcoholic liquid with aromatic hazelnut flavour.

Application:
In food and flavour industry, for confectionery, ice cream and liqueur production and in perfumery.

Naturalness:
The product is manufactured from the named raw material. It contains apart from ethanol no additives and no other technical adjuncts, it is not blended and not formulated. The product is 100 % natural and it corresponds to the EC Flavouring Regulation No. 1334/2008 for flavouring preparations.

Stability:
Closed pack under cool and dry storage conditions and exclusion of light at least 5 years.
