Production:
The flavour compounds and a part of the oil are extracted from finely chopped and freshly roasted hazelnuts by supercritical CO2 extraction and transferred in ethanol (organic). The product contains aparat from ethanol no other solvent residues, no inorganic salts, no heavy metals and no reproducible microorganisms [1].

Application:
The extract can be used in a variety of ways as flavour, for example in the production of confectionery, ice cream or liqueurs.*
Due to its characteristic odour, the extract is well suited as an odorant for perfumes.*
