In folk medicine, lavender flowers are a filling component of herbal pillows that are supposed to help you fall asleep. The main component linalyl acetate acts as a mild sedative for restlessness, nervous exhaustion and sleep disorders [2,3]. Lavender oil also has antibacterial and antioxidant properties [4,5].*

The lavender flower extract is very widely applicable in the food industry. It can be used for flavouring alcoholic and non-alcoholic beverages, ice creams , confectionery, chewing gum and bakery products. It also adds a special nuance to spice mixtures and sauces. Especially in the beverage industry, beverages with flower flavours like lavender are trendy and very popular.*

Lavender oil is also suitable for use in dietary supplements, especially for sleep and relaxation.*

Due to its aromatic characteristic flavour, essential lavender oil is used as a fragrance in the perfume industry. Its antimicrobial and relaxing properties also make it suitable for use in soaps, shower gels, bath additives, hair or foot care products [6].*
